Mashed potatoes are generally a household dinner staple across the USA. Yes they taste good, but they also don’t help with the up-trending waist circumferences across America (or the world for that matter). Some genius (definitely not me) decided to make a mock of this side dish and replaced the potatoes with cauliflower. By doing this, the nutritional status gets flipped from being fattening to down-right good for you! This is just one version that we made but you can definitely try all sorts of different types depending on the additions/spices.

What is needed (Makes 4 Servings):
- 1 head of cauliflower
- 4 cloves of garlic
- 1 – 2 tbsp real butter
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp rosemary (optional)
- Wash and then cut head of cauliflower into florets (remove stem)
- Place cauliflower florets into steamer and steam for about 10-15 min (until soft)
- Sautee garlic and rosemary in olive oil until lightly browned
- Once cauliflower is soft and garlic/rosemary is sauteed, place everything into a blender
- Blend all ingredients until smooth while adding in the butter
- Serve in place of mashed potatoes and see if anyone notices a difference!
