When I first heard about making a pizza with a cauliflower and cheese crust, I really didn’t believe it could possibly be good. Well I tried it and it WAS GOOD… but it could have been better. It needed a breadier taste (is that a word?). I decided to tinker a bit in the Lean Kitchen (it’s really just a normal kitchen, but it sounds good right?). By adding almond flour and removing some cheese in the crust recipe, it seemed to do the trick! As with a lot of these recipes, you’ll have to try it yourself before you believe me. Also this is just a concept idea so feel free to make whatever kind of pizza you want (ie. pesto, Hawaiian, etc).

What is needed (Makes 4 slices):
- 1 cup (or 1/2 head) cooked riced cauliflower (see below to learn how to rice cauliflower)
- 1 beaten whole egg
- 1/3 cup almond meal
- 1 cup 2% mozzarella cheese
- 1 tsp Garlic Powder
- 1 cup shredded 2% mozzarella cheese
- 1/4 cup tomato sauce or no sugar added marinara sauce
- 2/3 cup turkey sausage
- 20 slices of turkey pepperoni
- Preheat oven to 450 degrees
- Using a cheese grater/food processor grind up 1 cup of cauliflower (the pieces will look like grains of rice)
- Cook “riced” cauliflower in a microwave safe bowl in the microwave for 8 minutes.
- Allow riced cauliflower to cool and mix together egg, almond flour, cheese, and garlic powder.
- After cauliflower is cooled off a bit, pour cauliflower into egg, almond, cheese, garlic mixture.
- Mix ingredients and spread on top of a well olive oil greased cookie sheet.
- Bake crust for about 15 minutes. (You can spray some olive oil on top as well to help brown it)
- Pull out crust and add tomato sauce, turkey sausage, turkey pepperoni, and another 1/4 cup of cheese.
- Put back into oven for 5 minutes (or until cheese has melted)
- Once finished, let pizza cool for 5 minutes – slice, serve, and be amazed.

This looks amazing! I’ve been flirting with the idea of making a healthy alternative pizza, but haven’t rolled my sleeves up and tried it yet. This looks pretty easy and still tasty too! Going to have to try it this weekend. Thanks!
