Sometimes it seems as though it is truly impossible to match the taste of some restaurant food without making the meal pretty bad for you. I always figured mozzarella sticks would fit that category… until now! One of the snacks we recommend to patients as a good source of lean protein are low-fat cheese sticks (Frigo’s brand is pretty good). I figured that if I could some how bread them, they would taste pretty similar to the real deal. The only problem with that was finding a substitute to the high-calorie/carbohydrate bread crumbs! Luckily we have been using almond meal for just about everything now and it worked perfectly. Enjoy!

What is needed (Makes 6 mini cheese sticks):
- 3 Low-Fat Cheese sticks (we use Frigo)
- 1 egg
- 1/8 cup almond meal
- 2 Tbps olive oil
- Salt (optional)
- Italian seasoning/Garlic Powder (optional)
- Heat medium frying pan with olive oil on medium to medium high
- Cut cheese sticks in half
- Beat egg in a bowl
- Mix almond meal with salt and seasonings in shallow bowl
- Dip each cheese stick in egg mixture and let excess egg drip off.
- Roll the egg covered cheese in almond meal until completely covered.
- Place coated cheese stick in frying pan. Turn cheese stick over after about a minute or until brown.
- When cheese stick is brown on both edges, remove and put on plate.
- Repeat until done. YUM!

Just had these, they were awesome! Taste like the real thing. The cheese oozes out over the breading a bit, but it’s still delicious.
