Reflecting back on Super Bowls past, I remember when my Colts played (and beat!) the Bears a few years ago during my college years. I got to thinking about what food my roommates and I served at our party. It was pretty much chips and dip and one of those giant cookies from the grocery store with tons of icing, as well as my favorite- cupcakes (also with icing)! Since that time, I have make a conscious effort to eat better. Here is a healthy alternative to your average fattening brownie. Inspired by Sally but I added my favorite protein powder to the mix.
Calories (per brownie): 98 Protein: 5.5 g Total Carbs: 6 g (4 g net) Fiber: 2 g Fat: 6 g
What is needed (Makes 18 brownies):
- 3/4 cup natural peanut butter
- 1 cup Splenda (baking version) (or equivalent Xylitol, Stevia, etc)
- 3/4 cup fat-free plain Greek yogurt
- 2 scoops Chocolate (or chocolate PB) Leaner Living MRP
- 1 whole egg
- 1/2 cup whole oats (or oat flour)
- 1/4 cup skim milk or low carb milk
- 1/2 cup baking cocoa
- 1 tsp baking powder
- 1/4 tsp salt
- Preheat oven to 350 degrees
- Mix ingredients in food processor (except peanut butter)
- Place in greased (we used olive oil spray) 8×8″ glass baking dish
- Microwave peanut butter for 30 seconds, then distribute it in spoonfuls throughout the batter and swirl it around with a knife
- Bake for 20-25 minutes (done when edges separate from side of dish)
- Allow to cool prior to serving
- Enjoy!
