The Insalata Caprese (salad in the style of Capri) is a very simple salad to make. While it is simple, it is also made up of our Approved Lean Foods! I only coincidentally got introduced to it during lunchtime with a bariatric surgeon and his employees. They were ordering from an Italian restaurant so I needed to find something that was Leaner Living approved. Lo and behold I saw the caprese and what it consisted of. Instead of being a side salad (or first course) I made it my main course by requesting a grilled chicken breast on top. It was love at first bite! We decided to make a small change by adding some arugula in our recipe, but the concept remains. Simple and yummy. Remember you can add a serving or so of lean meat to make it a meal!

What is needed (Makes 1 Serving):
- 1 small handful of arugula (you can substitute with spinach/romaine/ or just basil)
- 1/2 medium tomato split into four pieces, or diced, or in slices
- 2 small balls of low fat mozzarella
- 2-4 fresh basil leaves split apart
- 1 – 2 tsp extra virgin olive oil
- 1 – 2 tsp balsamic vinegar
- 1/2 tsp pepper (optional)
- Throw the arugula in a salad bowl or on a plate
- Top arugula with tomato, mozzarella, and basil.
- Drizzle extra virgin olive oil and balsamic vinegar on top.
- Add pepper to taste
